Delicious Southwest Corn Pudding

Ingredients:

1 tablespoon olive oil
1 tablespoon butter
1 medium onion, halved and thinly sliced
1 1/2 cups fresh corn kernels (3 ears), or thawed frozen whole kernel corn
1/2 cup chopped red sweet pepper
1/2 teaspoon ground cumin
1/4 cup cornmeal
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 14 1/2 – ounce can cream-style corn
4 eggs, lightly beaten
1 4 – ounce can diced green chiles, undrained
1 cup shredded sharp cheddar cheese (4 ounces)
1 tablespoon butter

Directions:

Heat oil and 1 tablespoon butter in a 9- or 10-inch cast-iron or other heavy oven-going skillet over medium-high heat. When butter is melted and begins to bubble, add onion. Cook for 5 minutes or until onion is soft and beginning to brown, stirring occasionally. Add corn kernels, sweet pepper and cumin. Cook and stir for 3 minutes more. Remove skillet from heat to cool slightly.
Meanwhile, in a medium bowl, combine cornmeal, flour, and salt. Add cream-style corn, eggs, undrained chiles and cheese; stir just until combined.
Fold onion mixture into cornmeal mixture. Return skillet to medium heat and add 1 tablespoon butter. When butter is melted, tilt skillet to coat bottom with butter. Pour batter into skillet.
Transfer skillet to a 350 degrees F oven and bake for 30 to 35 minutes or until a knife inserted near the center comes out clean. Serve warm.

Delicious Goddess Guacamole

YIELD: 4 Servings
INGREDIENTS

2 cups kale leaves
4 Hass ripe avocados
3 ripe tomatoes, seeded, finely chopped
1/4 cup minced red onion
2 jalapeno chilies, seeded, finely chopped
1 lime, juiced
1/2 teaspoon sea salt
1/4 cup fresh cilantro, minced
PREPARATION

Place the kale leaves in a food processor and pulse until they are finely chopped. Cut the avocados in half, and remove the pits. Scoop out the flesh and place in a large wooden or metal bowl. Add salt and mash with the back of a wooden spoon until desired texture is reached—I like mine a bit chunky. Stir in kale leaves and remaining ingredients. Taste and adjust the seasonings with salt.

Place a piece of plastic wrap directly over the surface of the dip. Store in the refrigerator up to 10 hours. Serve with whole grain tortilla chips, toasted whole wheat pita wedges, or toasted soft corn tortillas.

Delicious Apple Cheese Wraps

YIELD: 4 Servings
ACTIVE TIME: 2 minutes
TOTAL TIME: 2 minutes
INGREDIENTS

1 granny smith apple
1 slice lemon
2 slices cheddar cheese, cut in half
2 slices deli turkey or ham, cut in half
PREPARATION

1. Slice the apple into 1/2 inch thick slices. Rub the apple with the lemon wedge to prevent from going brown.

2. Slice the cheddar cheese into 1/2 inch wide slices and the ham in 1/2 or in 1/4 (the ham needs to be large enough to wrap around the apple).

3. Place an apple slice and a cheese slice on top of the deli meat and fold over deli meat to wrap.
