Delicious Fresh Fruit Popsicles

INGREDIENTS

1 peach, cut into 1/2-inch slices (1/2 cup)
2 kiwis, peeled and sliced into 1/4-inch rounds
3/4 cup strawberries, finely chopped
1/2 cup blueberries
1/2 cup raspberries
1 1/2 to 2 cups of fruit punch or 100-percent white-grape juice

DIRECTIONS

1. Combine fruit in a mixing bowl, and arrange the mixture into 8 3-ounce popsicle molds.

2. Pour enough juice into each mold to just cover fruit.

3. Insert popsicle sticks and freeze until solid (about 6 hours).

Delicious Roasted Jalapeno and Avocado Grilled Cheese

Ingredients:

  • 6 slices bread, cut in half
  • 6-7 jalapenos, halved with seeds removed
  • whole milk queso fresco, sliced thin
  • 2 avocados, thinly sliced or mashed
  • Sour cream

Directions:

  1. On the broiler setting, roast the jalapenos cut side down for about 5-6 minutes, or until the jalapenos are just starting to char.
  2. Place a few slices of cheese on one slice of bread. Add the jalapenos on top.
  3. On the other slice of bread, spread a thin layer of sour cream.
  4. Assemble the sandwich and grill for several minutes until the cheese is melted.
  5. Add the avocado slices onto the sandwich after grilling.

GREEK YOGURT BERRY MEDLEY SMOOTHIE

Yield: 2 servings

Loaded with three types of berries, a ripe banana for natural sweetness and oats for fullness, this smoothie is perfect for breakfast-on-the-go!

INGREDIENTS

  • 1/2 cup sliced strawberries
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 1 ripe banana
  • 1 cup Greek yogurt
  • 2 tablespoons old fashioned oats
  • 1-2 tablespoons agave

INSTRUCTIONS

  • Combine strawberries, raspberries, blueberries, banana, Greek yogurt, oats, agave and 1 cup ice in blender until smooth.
  • Serve immediately.
